I am making a design with big letters in it but I want to erase a part of an ‘A’. When I use the knife tool on the part I want to erase, the open area in the A gets filled. I´m not sure about what you need in the end - but vectorize border+Boolean subtract works here:

Can you probably provide the file? I don´t get the whole picture and can´t tell how many objects are involved for example.
